Gathering is worthwhile, when you have little gold.
Once you have a bit, for the return, they're a waste of time.

The production skills, transmutes and profession dailies will make you more.
And nothing beats the gold from an hour or so of dailies, at least in that hour.
Multiple teams, give the option of dailies for more hours per day.

Then again, you get to a certain point, and all the toons you care about have epic flying and cold flying, and all the gear you'd want to buy. Then you farm now and then (be it dailies, disenchanting mats in heroics or whatever), but more for having whatever you want down the road, then because you need anything.
