I actually use to have this problem myself, what I narrowed it down to was playing in windowed mode. So it would seem the computer is putting resources to your desktop as well as both games. Try running both games in full screen on both monitors and see if that works, you could also try dedicating 2 cores to each with task manager. And if that doesn't work I would assume your card is getting to hot like tim said, but I know for a fact Ati's drivers are not up to par with dual monitors nor eye finity so you might also think about trying new drivers.

Sounds like your graphic card is having problems processing DirectX when its on 2 monitors?
